Made white pasta using Weikfield White Pasta Sauce

The winter sun in the balcony and a lazy Saturday afternoon was motive enough enough for me to set a table fro two and serve some good Italian food. What better than some creamy pasta. ? Since I did not have time and inclination to start form the basics of making white sauce decided to use the above Weikfield White Pasta Sauce.

The instructions were pretty easy to follow, for a 100 gram boiled pasta ( I used rotini or helix shaped pasta), I need to put 1table spoon of olive oil in the pan followed by the pasta sauce mix. Though it says sauce on the packet, it is essentially a dried white powder which you have to saute in the oil. Once the powder has been sauteed (2 mins on low flame) , you have to add 160 ml of milk or water. I wanted a creamy version and since this was the first time I was using this premix, I went with single toned homogenized Amul milk. Then a 2 min stir gets the sauce thick and you have to just add boiled pasta to it. Instantly the sauces coats the pasta and its ready to be served.

Though it was real quick to make this, I had few issue with the taste. Firstly Weikfield to make it for "India palette" added red chilies in the mix which made it spicy. For some one like me who tolerance for chillies is low this was bit on the hot side. Especially when eating a creamy white sauce pasta I don't want red chili flakes and seeds in it. Secondly the sauce dried out real fast when the pasta cooled down. The winter did not help much either and by the fourth morsel I could only see pasta and no sauce in my plate. I for one like to have some sauce in my plate and lick it off later.

But as they say nothing can be really bad when you can have a glass of wine with it. I had my pasta with some wine. and since I am not much of a conformist either, I opened a bottle of Shiraz. With the sun setting the backdrop I felt I am eating at one of the innumerable Trattoria in some laid back Italian city. Do share your experience with making white pasta with some of the premixes available in the Indian markets.
